Take pork out of packaging and place in deep pan.
Season pork with a rub of your choice. Chef Wade's rub featured in picture.
Wrap pork with foil.
Place covered pork in refrigerator until you are ready to cook.
Clean the Alto-Shaam Cook & Hold probe.
Set cook temp to 225 degrees fahrenheit.
Set probe temperature to 190 degrees Fahrenheit.
Set the holding temperature to 165 degrees Fahrenheit.
Put pork in Alto-Shaam Cook & Hold Oven.
Insert probe into the Pork.
Close the door to the Alto-Shaam Cook & Hold and press start. Let pork cook over night.
The next day pull the pork from the Alto-Shaam Cook & Hold oven.
Shred Pork and serve! Enjoy!
