How to cook paella in the alto-shaam ctp

Assemble all the ingredients.

Pre-Heat Combi Oven to 350F (177C).

Sauté the onions, garlic and tomatoes to make a sofrito.

Place the sautéed sofrito ingredients into a food processor.

Blend or pulse until you get a chunky sauce.

Marinate the chicken with the Paella mix & salt/pepper. Place marinated chicken into a Paella pan with the onions and rice.

Cook Combi Mode- 350F (177C)- for 7 mins.

Remove from the oven and mix all ingredients together. Season with salt and pepper.

Place pan back into the oven. Combi Steam- 212F (100C) for 20 minutes.

Remove again from the oven and Paella is ready to serve!
